Chewy Oatmeal Raisin Cookies

These cookies are delicious! Hope your family enjoys them as much as ours!

Chewy Oatmeal Raisin Cookies

3 eggs (slightly beaten)
1 cup raisins
2 teaspoons vanilla extract
2 sticks butter
1 cup Brown sugar
1 cup White sugar
2-½ cups flour
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
2 teaspoons baking soda
2 cups instant oats
1 cup pecans (optional)

Combine eggs, raisins, and vanilla. Set aside in the refrigerator for 30 min-1 hour.
Cream butter, brown sugar, and white sugar. Add flour, salt, cinnamon, and baking soda. Mix well. Add egg mixture, oats and pecans (optional). I sometimes substitute pecans for some craisins or chocolate chips.
Drop by teaspoonfuls onto ungreased cookie sheet and bake for 8-10 minutes at 350 degrees or until golden. Enjoy with a big glass of milk. All cookies taste better with a glass of cold milk in my opinion. *wink*
